For dressing, you can make double quantity or more for next days use, it can be kept in air tight container in a fridge for a week.

Try this recipe with smoked fish (trey cha er) instead of bacon. You also can try this recipe for Green Mango Salad, just use green mango instead of pomelo and use smoked fish instead of bacon, and add more Chi leaves like Chi Barang leaves, Khmer basil leaves. and don't use coconut.

Then Sip the Soup
You like Seafood, Don't ya?

S' ngor Chruok Bangkang ( Sour Lobster Soup with Herbs)

Ingredient
300 gm Lobster, cleaned
4 cup Water
1 stalk Lemon Grass, pounded and cut into 10cm
2 pcs Kafir Lime Leaves
1 tbsp Uncooked Rice
1 tbsp Salt
1 tbsp Fish Sauce
1 tsp Sugar
1/3 cup slices Combo of Saw Leaves(chi Barang), Basil leaves, and spring Onion
Juice of half lime

Preparation
Bring the water to boil in a large pot with uncooked rice and salt, when it bubbles add lemon grass and lime leaves and boil for 5 minutes so the full aroma is released. Then add lobster, either whole or cut into big pieces, and cook for 10-15 minutes, then season with sugar and fish sauce. Just before serving, add the combo of chi leaves and spring onion and lime juice.

Tips:
I would request you if you could do a little more work, just peel off the lobster shell and boil along with water, after 5 minutes then you remove and discard away. for this you will have a better flavor soup.

You can use this recipe with fish and chicken to do Sour Fish Soup and Sour Chicken Soup too. Then you will know the meaning of Khatna Teuk Phnek...

You might have to use MSG, Ajinomoto for every dishes as it is commonly use in our home cooking.

<span style="font-weight: bold; She wanted to open a savings account and insisted on talking to the president of the Bank because, she said, she had a lot of money.

After many lengthy discussions (after all, the client is always right) an employee took the elderly woman to the president's office.

The president of the Bank asked her how much she wanted to deposit. She placed her purse on his desk and replied, "$165,000". The president was curious and asked her how she had been able to save so much money. The elderly woman
replied that she made bets.

The president was surprised and asked,"What kind of bets?"

The elderly woman replied, "Well, I bet you $25,000 that your testicles are square."

The president started to laugh and told the woman that it was impossible to win a bet like that.

The woman never batted an eye. She just looked at the president and said, "Would you like to take my bet?"

"Certainly", replied the president. "I bet you $25,000 that my testicles are not square."

"Done", the elderly woman answered. "But given the amount of money involved, if you don't mind I would like to come back at 10 o'clock tomorrow morning with my lawyer as a witness."

"No problem", said the president of the Bank confidently.

That night, the president became very nervous about the bet and spent a long time in front of the mirror examining his testicles, turning them this way and that, checking them over again and again until he was positive that no one could consider his testicles as square and reassuring himself that there was no way he could lose the bet.

The next morning at exactly 10 o'clock the elderly woman arrived at the president's office with her lawyer and acknowledged the $25,000 bet made the day before that the president's testicles were square.

The president confirmed that the bet was the same as the one made the day before. Then the elderly woman asked him to drop his pants etc. so that she and her lawyer could see clearly.

The president was happy to oblige.

The elderly woman came closer so she could see better and asked the president if she could touch them. "Of course", said the president. "Given the amount of money involved, you should be 100% sure."

The elderly woman did so with a little smile. Suddenly the president noticed that the lawyer was banging his head against the wall. He asked the elderly woman why he was doing that and she replied, "Oh, it's probably because I bet him $100,000 that around 10 o'clock in the morning I would be holding the balls of the President of the Bank of Canada!"

Signs...

Dear All ( especially ladies), please don't mind me when you view the picture of signs below...They're just signs that I see in the other way around...

"This is for you, Momma."

The mother was embarrassed by her earlier over-reaction, but her anger flared again when she opened
the box and found it was empty. She spoke to her daughter in a harsh manner.

"Don't you know, young lady, when you give someone a present there's supposed to be something inside the package?"

She had tears in her eyes and said, "Oh, Momma, it's not empty! I blew kisses into it, until it was full". The mother was crushed. She fell on her knees and put her arms around her little girl, and she begged her forgiveness for her thoughtless anger.

An accident took the life of the child only a short time later, and it is told that the mother kept that gold box by her bed for all the years of her life.

Whenever she was discouraged, or
faced difficult problems, she would open the box and take out an imaginary kiss, and remember the love of the child who had put it there.

In a very real sense, each of us--as human beings--has been given a golden box filled with unconditional love
and kisses from our children, family, friends and GOD. So, you shift into Park, unlock your doors, and jump out of your car to remove that paper (or whatever it is) that is obstructing your view.

When you reach the back of your car, that is when the car hacker's appear out of nowhere, jump into your car and take off.

They practically mow you down as they speed off in your car.

And guess what, ladies? Each year in the capital, Castries, throngs of people jam the streets in colorful costumes to parade to the latest soca and calypso hits.

The major highlight of the carnival season is the calypso competition. The island's premier performers pit their lyrical and musical abilities in an attempt to win the coveted Calypso Monarch title. The season begins months in advance, with competitors performing nightly for audiences eager to hear the latest offerings.

The carnival also features a beauty queen competition, a steel band competition called Panorama and a King and Queen of the Band competition. Individuals representing particular bands compete in elaborate costumes before a panel of judges. Amidst the revelry there is also a jam that features top soca acts from throughout the Caribbean.

All of the action explodes into a kaleidoscope of color and sound on Carnival Tuesday when the costumed bands take to the streets for a day of complete and unadulterated fun.

Here are some pictures to share for you...

<img style="margin: 0px auto 10px; It was my second time. First time was with my friend and we took boat, so I did not have to worry too much as he will be my guide, but this time I was alone all by myself and I took a taxi. We left Siem Reap in the morning as always but unfortunately my taxi broke down somewhere in Kompong thom and took very long time to fix it. Till noon then we could continue our journey, back on the road again.I always kept in touch with my friend through public phone, as taxi stopped sometime, to let him know that I will be late as the problem occurred. I reached Phnom Penh at almost 6pm, You see! I left Siem Reap 7am, oh! god. It took me a whole day.Anyway I was in PP now, but now the taxi was stopping somewhere near Hotel Le Royal, I knew that hotel coz my friend's house is somewhere behind it. As taxi stopped there so I decided to step down and leave for my friend's house, even though it was my second time but I seemed to remember things there, but see now I got a problem. My friend was waiting to pick me up at the taxi station, so called Soriya bus station something like that...since I had to cross the street to the other side, and it was so crowded , it was not like my hometown that hardly to see even cow cart to pass hehehehe...but now here in PP, so everywhere were crowded, I was wondering how to cross the street, and a Motodup came to me ask if I need to go somewhere, of course I do, I replied but I just need to cross the street hehehehe...I did spent 1000 riels for him. then I called my friend and we met shortly after that. Then I told him that I hired a Motodup just to cross the street. He and many other in the house were really laughing at me. It was really imaging to me and I still remember that moment. But I think it was a good idea to cross the street in PP by hired a Motodup ehehehe...

Places I've Ever...

Now, Here I Am

Saint Lucia, Caribbean.
